EXECUTIVE CHEF
DALIS CHEA

Chef Dalis’ passion for food emerged at an early age while working in his parents’ bakery.  A graduate of Le Cordon Bleu Culinary Arts Program, he worked under executive chef Greg Atkinson at Canlis Restaurant and chef Kevin Davis at Oceanaire.  Also the executive chef of Herban Feast Catering, Dalis’ favorite dishes combine seasonal flavors with comfort and simplicity.

SHUN VIGER

Shun Viger is Fresh Bistro’s powerhouse chef de cuisine.  He got his start in food at a young age, earning his first scar from a hot popcorn kernel.  Priding himself in his commitment to good, tasty food, Shun started his professional career working at various local restaurants including Salty’s on Alki, Endolyne Joes and 0/8 Seafood Grill.  While Fresh Bistro is Shun’s second home, you can also find him enjoying pho for lunch at Than Brothers or late night street tacos with hot sauce, and of course snacking on popcorn – still a favorite. Shun is a graduate of the South Seattle Community College culinary program.

JOHN SCHIFFMAN

John is the face of Fresh Bistro and the engine behind your service experience.  Spending his younger years in a variety of restaurant jobs, there is no job he hasn’t done in the industry.  His joy for cocktails and sharp attention to detail is the catalyst behind Fresh’s “Best Bloody Mary” reputation and a driver for creative cocktail pairings.

WHITNEY WORRELL

Whitney grew up on the Olympic peninsula spending most of her time outdoors fostering a love of nature and foraged, local foods.  She then attended Western Washington University and Bellingham Technical College earning a degree in both Culinary Arts and Pastry, while representing Washington State on a student culinary competition team.  Whitney loves working with the brunch and dinner menus but also relishes the opportunity to contribute to the dessert menu, which helps her skills stay well rounded.  In her spare time she likes to spend time with her pets, Clumps and BB.
